Bibimbap
Prep Time 15 Minutes Makes 4 servings
For the Gochujang Sauce

4 tbsp gochujang sauce

2 tbsp orange juice

2 teaspoons rice vinegar

2 teaspoons sesame oil

2 teaspoons honey

2 teaspoons freshly grated Ginger

2 garlic cloves, grated
For the Bowl
-
Shredded kale
-
1 tsp soy sauce
-
1 tsp rice vinegar
-
1/2 tsp sesame oil
-
4 cups cooked brown jasmine rice
-
1 cup cooked adzuki beans
-
1 red bell pepper, seeded and sliced thin or chopped
-
1 carrot, peeled and cut into 1/4 inch matchsticks
-
1 tbsp toasted sesame seeds for garnish
Instructions
-
To make the gochujang sauce, Together all the ingredients in a small bowl until fully combined. set aside.

Put the kale in a separate bowl, add the soy sauce, vinegar, and sesame oil, and knead it well for a minute so it will until the kale wlts and darkens, turning shiny. Set aside
-
To assemble your bowls, put 1 cup of rice in each bowl and top it with 1/4 cup beans, 1/4 of the peppers slices, 1/4 of the carrot, and 1/4 of the dressed kale. Spoon a tablespoon of gochujang sauce into the middle of each bowl and sprinkle sesame seeds on top. Serve with extra sauce on the side.

1 12 oz block of Tofu

Drain your tofu and use a dishcloth to absorb water

Cube the tofu and place it in a bowl

Season with:

One to two tablespoons of soy sauce or liquid aminos

One teaspoon of rice vinegar.

Toss tofu and seasoning

Add two Tablespoons of corn starch

Toss in a bowl

You can air fry or bake in the oven until golden brown

Baked Potatoes & onions with Bean Sausages

Peal and cut potatoes at desirable size. Small potatoes with think skin can be cut in half and may not need to be pealed.

Chop Onions at desired size.
-
Dry potatoes on a dish cloth, place in bowl with onion.
-
Season with herbs, salt and olive oil.
-
Bake potatoes and onion mix in oiled cookie sheet or baking dish until a bit crisp. You can also use silicone matt for this step but they are crispier directly on a baking dish.

Add Bean sausage chopped at desired size (recipe provided below) and mix them with potatoes together and kept in the oven until serving.
Sides: Saurkrout: bought and pickles. Served authentic Polish pickles and Sourkrout found at Meijers.

Authentic Vegan Pierogi Recipe (Just Like Babcia’s!)

Ingredients

5 cups (600g) of flour

1 cup of water

1/2 tsp of salt

1.5 lbs of potatoes

7 oz tofu
-
1 big onion
-
1 tsp of mustard

5 tbsps of oil

1 tsp of salt

⅓ tsp of pepper

Water

3 Tablespoon of vegetable Oil

Salt
How To Make Vegan Pierogi Dough?
-
Sift the flour into the big bowl.
-
Add salt.
-
Add oil (can be combined with hot water)
-
Start adding the water slowly, letting it incorporate before adding more. If the water is too hot, use a fork first. Knead until you get a springy dough. Add more water or flour if necessary.
How To Make Vegan Pierogi Filling?
-
Peel and boil the potatoes.
-
Peel and dice the onion. Carmelize it on oil.
-
Mash the potatoes.
-
Dice the tofu.
-
Mix potatoes with tofu, onion, and mustard.
-
Season with salt and pepper.
How To Form Vegan Pierogi Ruskie?
-
After 30 minutes or so, thinly roll each piece out onto a floured surface to just under 1/16 - 1/8” thickness.
-
Use a round cookie cutter to cut the circles from the dough.
-
Put the filling (1/2-3 teaspoons) in the center of each circle. The more filling the better, however, you need to be sure it stays inside pierogi. When the filling will get between the dough when sealing, pierogi may fall apart during the cooking.
-
Pull the edges of each circle together to form pierogi. Make sure the seal is continuous and intact. You can't leave any free space, as pierogi will fall apart during the cooking. Pinch tightly.

Collect the remaining dough scraps and put them to the other 2 dough pieces. Repeat the process until the entire filling and dough are used.
How To Cook Vegan Pierogi Ruskie?
-
Pour the water into the big pot. Add 2 pinches of salt. Boil.
-
Gently throw pierogi, one by one into the boiling water.
-
When they start floating, wait for a minute and take them out with the slotted spoon.
-
Pour the oil on top.
Notes
You can use fresh/ frozen fruits instead of the potato filling.
Cook sausages for about 20 minutes. Mashed potatoes. Fresh cucumber. Fresh tomato.
VEGAN sausages

Ingredients

1 cup (200 g) + 1/2 cup (80 g) canned white beans.

1/2 fresh onion.

Fresh garlic.

1 cup (110 g) rolled oats.

1 teaspoon salt.

1/2 teaspoon garlic powder.

1/4 teaspoon hot chili flakes.
-
Ground black pepper. 1/2 teaspoon fennel.

1/4 teaspoon cumin.

Sweet paprika powder.
-
1 tablespoon tomato paste.

3 tablespoons chia seeds.
-
1/4 cup (60 ml) water.
-
1 tablespoon soy sauce.
-
1/2 cup (50 g) walnuts. Olive oil.
Directions

To blender Add Beans Fresh onion Fresh Garlic

One cup of rolled oats (blended into flour)

On a grinder add the 1 teaspoon salt ½ garlic powder, chili flakes and ground black pepper), ½ teaspoon fennel ¼ teaspoon cumin and sweet paprika powder. Blend and add to blender with other ingredients. Add also 1 tablespoon of tomato paste and 3 tablespoons of chia seed (blended in grinder then moistened with ¼ cup of water).

Add a Tablespoon of soy sauce and ½ cup walnut rinsed and blend it all.

Pour paste into a dish. Grease hands with olive oil and shape into sausages
-
Place into a parchment paper and foil and roll and twist ends. Lay them in a dish for steaming.

Cook sausages for about 20 minutes.
-
Remove foil and parchment papers place on plate and serve.

Mujadara Recipe (Rice and Lentils) Recipe

1 cup long-grain or basmati white rice rinsed
-
4 ½ cups water plus more for soaking the rice
-
½ cup olive oil
-
2 large yellow onions, thinly sliced
-
2 cups brown lentils rinsed and drained
-
1 teaspoon salt
-
2 teaspoons cumin
Instructions
-
In a medium bowl, cover the rice with cold water. Set aside.
-
Line a plate with two paper towels. Heat the olive oil in a large pot over high heat. Add the onions and cook, stirring constantly, until the onions are deeply browned and start to crisp around the edges, about 20 minutes. Use a slotted spoon to transfer to the plate and set aside. They will continue to crisp as they cool. Reserve the oil from cooking the onions.

Add the lentils to another pot, add water and stir to combine. Bring everything to a boil, then reduce the heat to medium-low and cover with a tight-fitting lid. Cook for 15 minutes.

Drain the soaked rice, rinse and transfer it to the pot with the lentils along with the salt. Stir once, then cover again with a tight-fitting lid and cook undisturbed for 15 minutes.

Remove the pot from the heat. Rest, covered, for 5 minutes longer. Add the cumin and fluff the rice and lentils with a fork to combine.

Pour the reserved oil on top of the mujadara. Then spoon the crispy onions on top. Serve warm.

Tabbouleh (also spelled tabouli or tabouleh) is a Middle Eastern salad made from fresh herbs and bulgur wheat. For a gluten free alternative, you can use cooked quinoa.

⅓ cup extra-virgin olive oil (I use less)
-
3 tablespoons fresh lemon juice
-
1 garlic clove, grated
-
½ teaspoon sea salt
-
¼ teaspoon ground coriander
-
Pinch cinnamon
-
3 cups finely chopped curly parsley, about 2 bunches
-
1 cup diced English cucumber
-
1 cup cored and diced tomato
-
⅔ cup cooked bulgur wheat*
-
⅓ cup finely chopped fresh mint (optional but gives it a special flavor)
-
2 scallions, chopped (optional)
-
¼ cup of chopped green olives.
Instructions
Step 1: bulgur wheat soak

To cook coarse bulgur, bring 2 cups of water to a boil in a medium pot. Stir in 1 cup dry
-
coarse bulgur, cover, and remove from the heat. Let sit for 20 to 30 minutes, or until the bulgur is tender. Drain any excess water, then fluff with a fork. Measure 2/3 cup cooked ingredients.

If using quinoa, follow the instructions in the package and let it cool. Do not overcook. Make sure it is fluffy.
Step 2: Assemble your tabouli

In a large bowl, whisk together the olive oil, lemon juice, garlic, salt, coriander, and cinnamon. Add the parsley, cucumber, tomato, bulgur, mint, and scallions and toss to combine.

Oven Baked Falafel

Serves 4
Falafel are flavorful balls of ground chickpeas, herbs, and spices. In Middle Eastern cooking, they're typically fried, but here, I bake them for an easy homemade twist. Serve them in a pita wrap with all the fixings, or find more serving suggestions in the post above.
Ingredients

1 cup uncooked chickpeas, soaked 24 hours, drained, rinsed, and patted dry* (see note)
-
½ cup chopped shallot or yellow onion
-
3 garlic cloves
-
1 teaspoon lemon zest
-
1 teaspoon ground cumin
-
1 teaspoon ground coriander
-
¾ teaspoon sea salt
-
¼ teaspoon cayenne pepper
-
¼ teaspoon baking powder
-
1 cup chopped fresh cilantro leaves and stems, patted dry
-
1 cup chopped fresh parsley leaves and stems, patted dry
-
1 tablespoon extra-virgin olive oil, plus more for drizzling
For serving
Pita bread, use gluten-free pita if needed

Pickled Red Onions
Tahini Sauce
Instructions
-
Preheat the oven to 400°F and line a large baking sheet with parchment paper.
-
In a large food processor, place the chickpeas (note: the chickpeas will have expanded during the soak time, be sure to use ALL of them here), shallot, garlic, lemon zest, cumin, coriander, salt, cayenne, baking powder, cilantro, parsley, and olive oil. Pulse until well combined but not pureed. Use a spatula to scrape down the sides of the bowl as needed.
-
Use a 2-tablespoon scoop and your hands to form the mixture into 12 to 15 thick patties (be careful not to pack them too tight or your falafel will be dense). If they're not holding together, give the mixture a few more pulses in the food processor.
-
Place the patties on the baking sheet. Drizzle generously with olive oil (this is the key to making these moist and crisp since we're not frying) and bake for 14 minutes. Flip and bake for 10 to 12 minutes more, or until golden brown and crisp on the outside. During the last few minutes of baking, wrap the pita in foil and warm in the oven.

Assemble pitas with a slather of hummus, diced veggies, falafel, herbs, pickled red onions, and generous drizzles of tahini sauce.
Notes
*Canned chickpeas cannot be substituted in this recipe or your falafel will turn out mushy.

Hummus

1 (15-ounce) can chickpeas, drained or 1 ½ cups cooked chickpeas (250g)

¼ cup fresh lemon juice, from 1 large lemon (60ml)
-
¼ cup well-stirred tahini, try our tahini recipe (60ml)
-
1 small garlic clove, minced
-
2 tablespoons extra-virgin olive oil, plus more for serving (30ml)
-
½ teaspoon ground cumin
-
Salt to taste
-
2 to 3 tablespoons cold water or aquafaba (45ml)
-
Dash ground paprika, sumac, or Za’atar for serving
Directions
-
Whip the tahini and lemon juice: In the bowl of a food processor, combine the tahini and lemon juice and process for 1 minute. Scrape the sides and bottom of the bowl, then process for 30 seconds more. This extra time helps “whip” or “cream” the tahini, making the hummus smooth and creamy.
-
Add olive oil and spices: Add the olive oil, minced garlic, cumin, and 1/2 teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl, and then process for another 30 seconds or until well blended.

Add the chickpeas: Drain the chickpeas. Then add half of the chickpeas to the food processor and process for 1 minute. Scrape the sides and bottom of the bowl, then add the remaining chickpeas and process them until thick and relatively smooth, 1 to 2 minutes.

Thin with water: The hummus will likely be too thick and still have tiny bits of chickpea. To fix this, slowly add 2 to 3 tablespoons of cold water or aquafaba with the food processor turned on until you reach the perfect consistency.

To finish: Taste and adjust as needed with more salt or lemon. Serve with a drizzle of olive oil and a sprinkle of paprika, sumac, or Za’atar over the top.

Storing: Store hummus in an airtight container and refrigerate for up to one week. Freeze it, covered with a thin layer of olive oil, for up to one month.

Chickpeas: Use canned chickpeas or home-cooked chickpeas for this recipe. Here is how we cook dried chickpeas.

Hummus without tahini: For the best hummus, which rivals our favorite store brands, use tahini. However, a chickpea puree without it is still quite delicious. Just add more olive oil. Another option is to use natural, unsweetened, creamy peanut butter in its place.

If you like garlicky hummus: Increase the garlic by a clove or use roasted garlic.
-
Aquafaba for fluffy hummus: This is the thick, starchy liquid in a can of beans (or the bean cooking liquid). You can use this instead of water in the last step of the recipe. Instead of plain water, add a splash of aquafaba at the end. As it whips, it creates an incredibly light and airy texture. Taste your aquafaba first. If it’s too salty, use less salt when making the recipe above.

Tahini and lemon juice are not creaming: Depending on your food processor, the blade might not come into contact with the tahini and lemon juice. You need to increase the amount of liquid in the food processor, so add the olive oil. If they still do not cream, add a tablespoon of cold water.

Blender: A food processor is best for making hummus, but a high-powered blender will work. Be sure to scrape the sides down a few extra times as you make it.

This spicy and savoury Vegan Pancit Bihon is a staple of Filipino parties! It comes together all in one pan, and it's just bursting with tofu and vegetables.
Ingredients

1-2 tbsp cooking oil

4 oz vegan pork belly (*optional, see Note 1)

½ yellow onion
-
2 cloves of minced garlic
-
1 carrot, julienned
-
1 cup snow peas or snap peas
-
1 rib celery, chopped (plus some celery leaves for topping, if you have
-
them)
-
1 cup water or vegetable stock
-
4 oz bihon noodles (aka vermicelli or rice stick noodles)
-
4 oz firm or extra-firm tofu, cut into small cubes (see Note 2)
-
2 tbsp soy sauce
-
½ tsp ground black pepper (optional)
Instructions
-
Sauté 1/2 yellow onion 1 tbsp cooking oil until the onions are soft and starting to brown at the edges.
-
Add the 2 cloves of minced garlic, 1 carrot, julienned, 1 cup snow peas or snap peas, and 1 rib celery, chopped, and stir fry for a few more minutes, until the vegetables are soft and glistening.

Pour in 1 cup water or vegetable stock and 1/2 tsp ground black pepper.

Add 4 oz bihon noodles and 4 oz firm or extra-firm tofu, cut into small cubes.

Press the noodles into the liquid and continue stirring and cooking until the water is absorbed and the noodles are soft. Season with 2 tbsp soy sauce.
Notes

Vegan Pork Belly: Can be left out, or subbed with five-spice tofu or marinated beancurd.

Tofu: Can be subbed with 1/2 cup of soy curls (30g dried) or homemade okara sausage.

Before serving, you can squeeze in the juice of 1 calamansi or key lime to taste. Portion into bowls and serve

Lelot Mais (Sweet & Coconut Rice)
Lelot mais is a Kapampangan delicacy: sticky rice cooked in coconut milk and sweet corn, traditionally wrapped in banana leaves. It shows how Filipino cuisine blends rice, coconut, and natural sweetness into snacks and desserts.
Ingredients
-
2 cups glutinous rice (sticky rice)
-
1-2 cans coconut milk
-
1 cup fresh or frozen sweet corn
-
½ -1 cup sugar (coconut sugar).
-
1 pinch of salt
Procedure:
-
In a pot, bring water to a boil and add the glutinous rice. Cook until the rice is about halfway done.
-
Pour in the coconut milk, then add the coconut sugar and a pinch of salt. Stir well to combine.
-
Continue cooking over low heat, stirring occasionally, until the mixture becomes thick and the rice is fully cooked and sticky.
-
Fold in the sweet corn and mix evenly.
Tips:
If you prefer a lighter color, you can use other kinds of sugar. Adjust quantities to taste.
Corn can be added sooner so it can be fully cooked with rice and coconut milk.
